INGREDIENTS
- 2 ½ teaspoons ground cumin
- 2 ½ teaspoons dried thyme
- 8 boneless, skinless chicken thighs
- 2 tablespoons sunflower oil (olive oil can be used as an alternative)
- 2 small onions, sliced into halves and then thinly sliced
- 2 cups Arborio rice
- 2 cloves garlic, finely minced
- 4 cups kale, shredded into thin strips
- 4 cups unsalted chicken broth
- Salt and pepper, to taste (optional)
INSTRUCTIONS
- Season Chicken Thighs with Cumin and Thyme
In a small bowl, mix together the cumin and thyme. Season the chicken thighs by sprinkling half of the spice blend on both sides.
- Sear Chicken Thighs in Oil Until Golden Brown
Heat one tablespoon of oil in a large, heavy-bottomed pot (such as cast iron) over high heat. Sear the chicken thighs until both sides are golden brown, then transfer them to a bowl and set aside.
- Sauté Onions and Garlic, Then Add Kale and Spice Blend
Add the remaining oil to the pot, then sauté the onions over medium-high heat until they begin to soften, about 3 to 5 minutes. Stir in the minced garlic, then add the kale along with the remaining spice blend. Cook until the kale starts to wilt, approximately 2 minutes.
- Add Arborio Rice and Chicken Stock to the Pot
Stir in the Arborio rice and pour in the chicken stock. Place the chicken thighs back into the pot, along with any juices collected in the bowl.
- Simmer Chicken and Rice Mixture Until Fully Cooked
Cover the pot, reduce the heat to medium-low, and simmer for about 28 minutes, or until the chicken is thoroughly cooked and the Arborio rice is tender.
